RED BEAN GLUTINOUS RICE CAKE

Chinese: Cao Hong Dou Nian Gao 焗红豆年糕

This gluten-free cake is a classic treat for Chinese New Year. It symbolizes "high year" or increased prosperity.


Ingredients

3 Large eggs, room temp

1/2 cup Coconut oil

2 1/2 cups Unsweetened Chinese soy milk (or any non-dairy milk of your choice)

2 cups (16 oz) Glutinous rice flour

1/4 tsp Salt

500 g (1.1 lbs) Sweetened red bean paste (fine or coarse)


Optional toppings: 2/3 cup Walnuts, Sesame seeds


Steps

  1. Preheat the oven to 350F (177C). Grease three 6.5 inch round foil pans. Set aside.

  2. Whisk eggs and sugar on med-high speed until golden yellow color.

  3. Add the oil, almond milk, rice flour, baking soda, and salt. Mix on high speed until there are no lumps in the batter.

  4. Pour half the batter equally distributed into the three pans (about 1/3 of each pan).

  5. Bake for 20 minutes, then remove from the oven.

  6. Spread red bean paste over each of the baked batter equally.

  7. Gently pour the remaining batter over the top of the three pans equally, submerging the red bean paste.

  8. Optional: Top with walnuts and sesame seeds.

  9. Bake for 45 more mins.

  10. Cool on wire rack for 15-20 mins before cutting into pieces.

  11. Enjoy while it's still warm!

NOTE: Store in the refrigerator after 2 days. Microwave for 15 seconds before eating.
