These flower cookies make beautiful gifts for Chinese New Year. They are flaky and crisp, filled with red bean paste.
Ingredients
Dough 1:
150g All-purpose flour
55g Coconut oil/Margarine
40g Powdered sugar
70g Water
Dough 2:
110g Cake flour
50g Coconut oil/Margarine
Filling:
1 lb Red bean paste
Egg wash White sesame seeds
Steps
Preheat the oven to 350F (177C).
Mix Dough 1 ingredients together. Knead with hands until the dough is smooth and elastic.
In a separate bowl, mix Dough 2 together until well blended.
15 balls: Divide Dough 1 into 20g each. Divide Dough 2 into 10g each. Divide red bean paste into 30g each. Roll each into small dough balls.
Wrap Dough 1 around Dough 2. Roll into a ball shape.
With a rolling pin, roll out the dough ball into 3mm thin, then roll it up from one end to the other. Cover with plastic wrap. Repeat the process again. (similar to making croissants).
Press the dough down a little bit with your palm. Fold two ends towards the center. Press it down again and roll into 1/4 in thin.
Place the red bean paste ball in the center. Roll into a round dough ball.
Press down the dough balls slightly again with your palm. Cut each piece into 12 equal parts from the center towards the outside edge. Leave the center part intact.
Twist each pedal 90 degrees up.
Brush the center with egg wash. Sprinkle center with white sesame seeds.
Bake for 20-25 minutes or until lightly golden brown.
Let cookies cool on a rack.
