These Chubbies are such a delicious warm treat. They're nice and doughy filled with chocolate chips and walnuts.
Ingredients
1 cup Vegan cold butter, cut into small cubes (or coconut oil) (227 g)
1/2 cup Brown sugar
1/2 cup Granulated cane sugar
2 Large eggs
1 1/2 tsp Vanilla extract
1 1/2 cup Cake flour
1 1/2 cup All-purpose flour
1 tsp Arrowroot powder (or cornstarch)
3/4 tsp Baking soda
3/4 tsp Salt
2 cups Chocolate chips, semi-sweet or dark (dairy-free)
2 cups Walnuts or Pecans, roughly chopped
Topping: Sea salt flakes
Steps
Preheat oven to 350F (177C).
Spread walnuts or pecans in an even layer on a baking sheet. Toast nuts in oven for 6-8 minutes or until fragrant.
In a large bowl, cream together cold cubed butter, brown sugar, and sugar for 4 minutes or until creamy.
Add eggs one at a time, mixing well after each one.
Mix in vanilla extract.
Mix in flours, cornstarch, baking soda, and salt. Mix until just combined to avoid overmixing.
Stir in chocolate chips and walnuts.
Separate dough into large balls, about 120 g each. The dough makes 11 large cookies.
Cover dough and chill for at least 60 minutes in freezer.
Preheat the oven to 390F (199C). Bake for 20 minutes or until golden brown.
Remove cookies from oven. Sprinkle sea salt flakes over each cookie.
Let cookies cool on the baking sheet for at least 10 minutes to set, then transfer to a rack to cool completely.
