ALMOND FLOUR BANANA BREAD (GLUTEN-FREE)

A great gluten-free option for those that love the classic banana bread!


Ingredients

2 Large eggs, room temp

1/3 cup Maple syrup

1/4 cup Coconut oil

2 Ripe bananas (1 cup mashed)

1 1/3 cup Almond flour

1 tsp Salt

1 tsp Cinnamon

Optional: 1/3 cup Walnuts, 1/3 cup Chocolate chips


Steps

  1. Preheat the oven to 350F (177C). Grease a 9x5 inch loaf pan. Set aside.

  2. Mix eggs on med-high speed until golden yellow color (4-5 min).

  3. Run mixer on low speed and slowly drizzle oil. Then beat at med speed until incorporated (1-2 min).

  4. Add bananas, maple syrup, and vanilla, mix on med-high speed (1-2 min).

  5. Add almond flour, baking soda, baking powder, salt, and cinnamon, on low speed (1 min).

  6. Optional: Mix in walnuts and chocolate chips.

  7. Put batter into a 8x4 loaf pans greased and floured.

  8. Bake for 35-40 min or until toothpick comes out clean (last 10 min, tent pans with foil to prevent excessive browning on top).

  9. Cool on wire rack for 15-30 min before turning pans out onto rack to cool completely.
