TUNA SALAD LETTUCE BOAT

My version of the classic tuna salad is tarty and crunchy! This easy recipe can be easily replaced with shredded chicken or salmon.


Ingredients

12 oz Canned tuna, packed in water, drained

2 Stalks of Celery, chopped

1 Apple, diced

3 tbsp Mayonnaise

1 tbsp Lemon juice

1/4 cup Dried cranberries

Salt and pepper to taste

Optional: 1/4 cup Red onion, diced

Lettuce leaves

Optional topping: Sriracha


Steps

  1. In a mixing bowl, combine tuna, celery, apple, mayonnaise, lemon juice, and dried cranberries.

  2. Optional: Mix in red onions and mustard

  3. Season with salt and pepper.

  4. Spoon tuna salad over each lettuce leaf.

  5. Enjoy plain or top with sriracha!

  6. Refrigerate leftover tuna salad.
