These sweet and salty bars taste just like childhood.
Ingredients
1 cup Vegan butter/margarine, room temperature
3/4 cup Granulated cane sugar
1 tsp Vanilla extract
2 Large eggs, room temperature
1 cup (9 ounces) Chunky peanut butter
1 cup (9 ounces) Creamy peanut butter
3 cups All-purpose flour
1 tsp Baking powder
1 1/2 tsp Salt
1 3/4 cups Any flavor Jam/Jelly (I used an 18 oz jar of strawberry jelly)
1/2 cup Salted peanuts, coarsely chopped
Steps
Preheat the oven to 350F (177C). Grease a 9x13x2 inch pan. Set aside.
Cream the vegan butter/margarine and sugar on medium speed until light yellow (~2 min).
Add the vanilla, eggs, and peanut butter. Mix on low speed until combined.
In a separate bowl, sift together the flour, baking powder, and salt.
Slowly add the flour mixture to the peanut butter mixture. Mix on low speed until combined.
Spread 2/3 of the dough into the pan and spread over the bottom with a knife. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. (The dough will spread in the oven).
Sprinkle chopped peanuts evenly on top.
Bake for 45 min or until golden brown.
Allow bars to cool. Cut into squares and serve.
